Hapa Chicago is a culinary concept from longtime friends Gilbert Paule, JR Runez and Kevin O'Connor that strives to bring Asian-American inspired street food to the Windy City. Hapa has spent the past year doing pop-up markets, small events, and catering for big-name clients like Threadless and Allstate Insurance. “Chicago is a world class city deserving of an event highlighting modern Filipino cuisine,” they say. “We can't wait for the day when you can hear on the street amongst friends ‘let's get Filipino’ like you would for Chinese, Thai or sushi.”
